Here are some tips on how to conserve and best enjoy your Bleu d’Auvergne.
Make sure to get good-sized slabs from your cheesemongers! It is best to have evenly sized slabs that you can cut down, rather than smaller sized pieces that will quickly spoil. Large slabs of cheese are easy to conserve and continue to age. This is particularly true for Bleu d’Auvergne, provided it is kept chilled and wrapped in foil.
In order to preserve the flavour and creamy texture of your Bleu d’Auvergne, keep it in the bottom of the fridge. Avoid moving it from place to place, and avoid sudden extreme changes of temperature.
When serving as part of a cheese plate, bring your Bleu d’Auvergne PDO to room temperature, like wine, at least one hour before consuming.
