Filo pastry triangles with Bleu d’Auvergne, pears and honey

Ingredients
- 8 generous slices of Bleu d’Auvergne
- 2 conference pears
- 4 sheets of filo pastry
- Whole walnuts
- Honey
Preparation
- Make one filo pastry triangle per person.
- Decore the pears.
- Cut the Bleu d’Auvergne into 1 cm slices.
- Roast the whole walnuts under a grill and crush.
- Place one slice of Bleu d’Auvergne on each sheet of filo pastry between 2 slices of pear.
- Add a pinch of walnut then pour over one tablespoon of honey. Fold the filo pastry into a triangle.
- Baste with melted butter using a brush. Bake for 20 mins at 180° C.
- Remove from the oven and glaze with a little honey.
- Eat while hot and crisp.
